Episode Ten: Jessica Ellis

Meet Jessica Ellis! Jessica has been in the service industry for 12 years. She got started in her home town in Montana at a local casino steakhouse. Bartending is her favorite gig in the industry and discusses many great perks you gain while working in this industry.

Jessica explains that not everyone can handle being in the service industry, but if they tried it out, it would teach respect, patience, and understanding with many other qualities to learn from.

Episode Nine: Erin Wallace Owner of 3 Successful Bar and Restaurants

On this episode meet Erin Wallace. She opened her first bar 13 years ago and has since opened 2 other establishments. The first being The Old Eagle in Manayunk, PA. The next being a craft beer bar in South Philadelphia that opened 8 years ago and only serves beer from micro breweries, called The Devil’s Den. Up to the most recent establishment opened 3 years ago, Barren Hill Tavern & Brewery. Barren Hill is a micro brewery that brews around 30 different unique beers.

Erin shares what it’s like owning and maintaining 3 bars and restaurants. She believes it’s important to know the industry before diving in and opening up a bar and she explains why. Most of her time is dedicated to each place every day of the week, but plans to make some time for herself soon.

Episode Eight: Joseph Corvino

Meet Joseph Corvino! Joe has been in the service industry for 16 years and in management for 8 years. He got started when he was 16 years old working down the shore as a dishwasher. Joe has done many different duties within the industry and recently joined the management team at Bistro Romano.

This episode Joe talks about great ways to give incentives to the Back Of House workers with reward and agreed upon bonuses. Incentives always help to get your staff to stay on top of their game, and to work harder.

Episode Seven: Ryan Fenton

Meet Ryan Fenton! Ryan has been in the service industry for 14 years. His first full service restaurant was at Mcfaddens where he started off running food. He climbed the industry ladder from running food all the way up to being a general manager and talks about the struggle of taking a pay cut when moving into management. Don’t worry, the pay and reward eventually gets better as he will explain in this episode!

Ryan has received multiple awards for his hard work and creativity in the industry including Zagat’s 30 under 30 award, and Philadelphia Night Life awards.

Episode Two: Jay Nieves

On this episode you meet Jay Nieves.  Jay has been in the service industry around 20 years and got started as a barback.  He has worked in multiple states around the east coast doing multiple jobs in the industry and is now an assistant manager at a known gay sports bar in Philadelphia.  He offers advice on bartending school. Jay was also a teacher at a local bartending school and he explains the difference he brought with him to his students.
